Mungo Linens and Bread Making Recipes
Here are some easy and delicious bread making recipes styled by Cape Town food stylist Lisa Clark. She used a selection of our linens as the backdrop to this lovely shoot. Enjoy!
Olive and Rosemary Focaccia Bread
Makes 1 Focaccia
Ingredients:
500g White Bread Dough
5 Sprigs Rosemary, pulled off stem
100g Kalamata Olives, de-piped
2 cloves garlic, finely sliced
Olive oil to drizzle
Maldon Salt to Sprinkle
Method:
- Preheat the oven to 200°C.
- Sprinkle a baking slide with olive oil. Flatten the dough onto the baking slide.
- Using your fingers, poke holes into the dough and press th e olives and rosemary firmly into the dough.
- Allow to prove, covered with a wet tea towel for 10 minutes.
- Scatter over the garlic slices and drizzle generously with olive oil and sprinkle with Maldon salt crystals.
- Bake for 20-30 minutes or until golden brown. Remove from oven and cool on a cooling rack, before cutting into squares to serve.
Wholewheat Bread
Makes 1 Loaf
Ingredients:
3 Cups Nutty Wheat Flour
10g Instant Yeast
10ml Brown Sugar
15ml Honey
20ml salt
15ml oil
50ml sunflower seeds
50ml sesame seeds
1¾ cups Tepid Water
1 egg, beaten
Method:
- Preheat the oven to 200°C.
- Place flour, yeast, sugar, honey, salt, oil, and seeds in a bowl.
- Make a well in the centre of the flour mixture and pour in the water. Mixture together and place in a warm place to double in size. Note: the mixture is quite wet and should resemble that of a fruit cake.
- Once doubled in size, spoon the mixture into a well greased loaf tin, filling it ¾ full. Brush lightly with egg wash and sprinkle with extra seeds.
- Bake for 1 hour or until bread sounds hollow when tapped with a flat hand.
- Remove from the tin and cool on a cooling rack.
Sweet Potato, Feta & Thyme Pizza
Makes 1 Pizza
Ingredients:
250g White Bread Dough
Olive oil to brush
1 sweet potato, very finely sliced
50g feta, crumbled
5 sprigs thyme, pulled off stem
Maldon salt to sprinkle
Cracked pepper, to season
Method:
- Preheat the oven to 200°C.
- Roll the dough on a floured surface into a thin oval shape, and place on a flou- dusted baking tray.
- Bruch the surface of the pizza generously with olive oil and layer the slices of sweet potato on top. Sprinkle with the feta, thyme and season with salt and pepper.
- Bake for 10-15 minutes or until dough is golden brown and potatoes are slightly golden or charred.
- Cut into slices and serve immediately.
Rosemary Bread Sticks
Makes 10 Bread Sticks
Ingredients:
250g White Bread Dough
5 Sprigs Rosemary, finely chopped
Olive oil to drizzle
Maldon Salt to Sprinkle
Method:
- Preheat the oven to 200°C.
- Divide the dough into 10 equal pieces.
- Roll out each piece into long thin sausages, and place on a greased baking sheet.
- Drizzle each bread stick with olive oil, then sprinkle with the chopped rosemary and Maldon salt.
- Bake for 10-15 minutes or until golden brown.
Basic White Bread
Ingredients:
500g cake flour
15ml salt
15ml sugar
10g instant yeast
600ml tepid water
30ml oil
Method:
- Sift together the flour, salt and sugar, then mix in the yeast.
- Make a well in the center of the dry ingredients and pour in half the water and oil. Mix together to form a soft dough adding more remaining water as needed.
- When you have a soft, pliable dough that is sticky, turn out onto a lightly floured surface and knead for about 10 minutes or until smooth and elastic.
- Place into a grease bowl, cover and place in a warm place to double in size, about 30 minutes.
- Once proved, use as desired to make loaves, rolls, bread sticks and pizza bases.
